Cooking for the Seasons: Summer
Aduki - Adzuki Beans
Ingredients:
- 2 cups Adzuki Beans
- 6 cups of water
- 1 Tsp seaweed (any kind)
- 1 – 2 yams, sliced about 1 inch
- Tamari or Bragg's Aminos
Optional Ingredients:
- 1 small onion
- Several garlic cloves
- 1 carrot
- 2 Tsp of olive oil
Preparation:
Wash beans add seaweed and soak for 24 hours.
Add sliced yams and put in pressure cooker and boil uncovered for 5 minutes.
Skim off foam.
Cover the pot and bring to pressure for 20 minutes.
Bring down pressure and add Tamari or Bragg's to taste. Without pressure cooker, bring to boil, skim off any foam and simmer for 60 – 90 minutes. When beans are soft and about to dissolve, add Tamari or Bragg's.
